I love pancakes like it’s nobody’s business. They’re all I ever want to eat. When I’m not stuffing my face with pancakes, I’m fantasizing about stuffing my face with pancakes. So I’m embarking on a pancake crusade - I’m going to make a different pancake every week. The more pancakes I make, the more pancakes I get to eat!
1 cup raspberries
1 tbs sugar
1/2 cup almond milk
1 tsp vanilla extract
1/2 cup flour
1 tsp baking powder
Crush raspberries and stir them together with sugar. Set aside.
Beat together egg / almond milk / vanilla extract.
Add in flour / baking powder and stir until just combined and slightly lumpy.
Mix in raspberries.
Scoop 1/2 cup batter on to a heated and buttered pan and cook for 3-4 mins.
Flip and cook for another minute or two until golden brown.
Makes 4 medium pancakes.
